Homemade Honeycomb Ice Cream


When deciding on what to make I thought what better in the 30 degrees heat then ice cream. I did some research on how to make ice cream without an ice cream maker and came up with this recipe that I have adapted and made my own from various recipes. I chose honeycomb ice cream because I once had it before and when I did I was in heaven so I have tried to re create that ice cream.

Honeycomb Ice cream:
Ingredients:
600ml Whipping cream
100g Honeycomb (plus extra for the topping)
250ml Condensed milk


Method:
1. Whip the cream using a whisk until stiff peaks form when you lift the whisk.
2. Add the condensed milk and continue whisking until well combined.
3. Stir in the honeycomb until well combined and pour into freezable containers or loaf tins.
4. Cover the containers with clingfilm and put in the freezer for 3 hours, whisking the ice cream vigorously every half an hour to stop ice build up.
5. Sprinkle extra pieces of honeycomb on top and leave in the freezer over night for the ice cream to set.

Taking the ice cream out of the freezer the next morning and scooping it into the cones was really exciting to know that I had made it from scratch. But no one needs to know how simple it was to do so, so shh don't tell. The ice cream was a great success and everyone loved it! I've already been asked to make more of it...but I'm happy to do so as that means more ice cream for me! xD




If you are even considering making this ice cream then I say go for it! It is so delicious and you will really see that homemade ice cream, even without an ice cream maker, is better than shop bought ice cream.

Pesto Pasta

When you think of pasta sauces you probably think that it is easier to just buy it from the shop than make it from scratch right? Well wrong, although yes it is easier to buy from the shop; I have been converted to homemade pesto after trying this recipe and I'm sure you would be to. 'But its cheaper to buy pesto from the shop' you're probably thinking, again wrong you only need 6 ingredients to make this pesto sauce and that includes the pasta; most of these ingredients wont even get used up so you can make multiple batches of pesto sauce.


On to the process; It is very simple really you just throw everything into the blender and fry the pine nuts-
easy-peasy-lemon-squeasy. 
Pesto Recipe:

Ingredients:
A handful of basil
2 cloves of garlic
50g Parmesan
150ml Olive Oil
Method:
1. Heat a small frying pan over a low heat. Add the pine nuts and toast until golden brown. Put into a food processor with the remaining ingredients and process until smooth. Season to taste.
2. Pour the pesto into a jar and cover with a little extra olive oil. Seal and store in a fridge, it can be kept for up to 2 weeks




The best part of making my own homemade pasta sauce was pouring it into a jar, as this for me is the difference between homemade and shop bought aside from the better flavor but also how you can personalise the jar and add your own special touch to it. You don't need a fancy jar to do this, I in fact used an old pesto jar and added a label to personalise it.




I served my homemade pesto with some fresh pasta and everyone loved it


No surprise the pesto pasta didn't last very long. Guess I'll be making a lot more batches of pesto in the

Speedy Sausage Rolls

As it is summer and everyone wants to be out in the sun as it is a rare occasion that Britain has good weather I have decided to come up with a quick summer nibbles recipe that wont take too long so you can enjoy every second in the sun! I have decided to make this recipe into a quick and easy step by step collage that can easily be followed and even printed out so you always have this speedy recipe to hand. What is the recipe? This recipe is sausage rolls as I thought that it is appropriate for this time of year now that the sun is blazing down and far more people will be having picnics. This is an ideal summer picnic recipe for both children and adults to!

List of ingredients just in case this isn't clear:

1 Clove of garlic
A handful of parsley
400g Sausage meat
375g Pack ready rolled puff pastry
1 beaten egg

I made these sausage rolls myself and was shocked at how good the results were considering how easy they were to make. I would advice that after making these sausage rolls grab the ketchup and drinks and tuck in as they will be gone in no time.
